San Buenaventura guacamole

Serves 10 people

Ingredients

6 ripe avocados

1 red onion, medium

salt and pepper to taste

Instructions

  1. Slice avocados in half. Scoop insides out and save 1 or 2 pits. Discard all other pits and skins.
  2. In a medium to large bowl, smash up the avocados with a fork.
  3. Chop onion, add to avocado, mix together with fork.
  4. Shake on a heavy layer of salt and one of pepper, mix with fork again.
  5. Add in more salt or pepper to taste. Once satisfied, put one or two avocado pits in the mixture to help keep from turning brown.
  6. Serve with tortilla chips.
  7. Note: Do NOT put in lemon. Lemon is only put into guacamole as a color preservative. It alters the taste and is unnecessary. There's almost never any of this left over to worry about it turning brown.
