FOOD FOR PARTIES

Confetti California avocado slaw

Serves 8 people

Ingredients

6 2/3 oz. cabbage, chopped

2/3 cup black beans, drained, rinsed

2/3 cup corn, kernel, thawed

1/6 cup red onion, diced

2/3 Tbs. red bell peppers, diced

2/3 Tbs. green bell peppers, diced

2/3 Tbs. jalapeno pepper, minced

1 tsp. cumin seed

1 1/3 ripe avocados, diced

Dressing

1 1/3 ripe Avocados

2 1/3 cups ranch dressing

1/2 cup parsley, fresh, chopped, packed

Instructions

  1. Combine the cabbage, black beans, corn, red onion, red and green bell peppers, jalapeno, and cumin seed.
  2. Dice avocado as needed.
  3. Add avocado and dressing to above.
  4. Stir to distribute and serve on line.
  5. Dressing
  6. Dice avocado.
  7. Pulse all ingredients in a food processor until smooth, stopping to scrape down sides.
  8. Label, date and refrigerate.
