Caramel apple crisp

Serves 8 people

Ingredients

Non-stick cooking spray

5 cups peeled, cored, sliced Granny Smith apples, (about 3 large apples)

1/2 cup sugar-free caramel ice cream topping (try Smuckers)

1 Tbs . cornstarch

1 1/2 tsp. ground cinnamon

Crisp topping:

1 1/4 cups flour

1 1/4 cups old-fashioned rolled oats

1/2 cup firmly packed dark brown sugar

1/2 cup vegetable oil

Instructions

  1. Preheat oven to 350 degrees. Coat the inside of an 8 x 8-inch baking pan with non-stick cooking spray.
  2. Stir apples with caramel topping, cornstarch, and cinnamon until apples are coated. Place in prepared baking pan.
  3. Combine flour, oats, and brown sugar in a medium bowl. Stir in oil until evenly moistened and mixture is in the form of large crumbs. Sprinkle crumbs over apples.
  4. Bake for 35 to 40 minutes or until apples are tender and top is golden brown. Let stand 30 minutes to one hour before serving.
  5. Serve with low-fat vanilla ice cream or frozen yogurt, if desired.
