FOOD FOR PARTIES

Marinated bocconcini (mini mozzarella balls)

Serves 12 people

Ingredients

16 oz. bocconcini (mini mozzarella balls) *Note: If you cannot find mini mozzarella balls get 1 or 2 large balls and cut into smaller pieces)

4 Tbs. herbs (Italian parsley, basil, chives, oregano)

2 cloves or 1 tsp. minced garlic

1/4 cup extra virgin olive oil

Instructions

  1. Combine all ingredients in a medium bowl.
  2. Toss until cheese is well coated.
  3. Cover and refrigerate at least 4 hours. (Note: Can be made ahead, covered, and refrigerated up to 3 days; best prepared at least 24 hours in advance.)
  4. Allow it to sit at room temperature for about 2 hours before serving.
  5. Serve with toothpicks.
