An annual poll of culinary professionals, taken a couple of years ago, indicated that the cuisine most likely to tempt us would be Pan-Asian. That hasn't changed much.

Dishes such as Tom Kha Kai, left, a spicy Thai coconut soup with chicken, are still expected to show up on the menus at special occasion events everywhere.
The poll, conducted by Pro-Chef, a newsletter sponsored by the Culinary Institute of America, put the current American favorite, Italian food, in fourth place. Here are the results of the poll. So far, the predictions have been remarkably accurate!
Pan-Asian: 28%
Hispanic: 24.57%
Middle Eastern: 20%
Italian: 17%
American: 10.29%
