FOOD FOR PARTIES

Red bean and rice salad

Serves 10 people

Ingredients

3 cups water

1 package red beans and rice mix (Zatarain's and other brands are available in most grocery stores)

1 can (15 1/4-oz) whole kernel corn, drained

1/2 cup chopped red bell pepper

1/2 cup chopped celery

1/2 cup chopped red onion

1/4 cup cider vinegar

2 Tbs. olive oil

Instructions

  1. Bring water to boil in medium saucepan. Stir in rice mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Stir occasionally to prevent sticking. Remove from heat. Let stand 5 minutes.
  2. Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork.
  3. Mix remaining ingredients in medium bowl. Add to rice mixture; mix well. Serve immediately, or cover and refrigerate until ready to serve.
